Natural Strawberry Syrup

Move over maple!  This Strawberry Syrup is the best pancake topping ever.  Maybe I’m a little bit partial, since strawberries are my all-time favorite fruit.  One of our favorite things to do every spring is visit the local strawberry farm and pick fresh berries, and it’s about that time again.  Yay!

This is one way I serve those strawberries.  It’s so easy and so good.

Unlike bottles of strawberry syrup you may find on the grocery store shelf, this natural one only has two ingredients: berries and honey, but it has lots of flavor.  In fact, it’s kind of addictive!

INGREDIENTS:

  • 2 lbs. fresh strawberries, with stems removed
  • 1 cup honey (Taste your honey, to make sure you like the taste; it doesn’t all taste the same!)

DIRECTIONS:

  1. Thoroughly wash berries.
  2. Chop berries in a large mixing bowl, creating a juicy but chunky consistency, OR puree in blender for a smoother consistency if you prefer.
  3. Add honey and mix well.
  4. Let sit for a little while (if you can wait!) for flavors to blend.

Then pour or ladle over a hot stack of pancakes and enjoy!

Whipped cream is always nice addition.  (This plate didn’t last long, fyi.)

Also great on ice cream, yogurt, or cake…or just eat it with a spoon. 😉

If you have any leftovers, store in the fridge.  It’s even better the next day!
